  • Add the yeast & sugar to the warm milk, stir & set aside for 5 minutes
  • Sift together the flour, icing sugar & milk powder
  • Add the flour mixture in a mixer & attach a dough hook
  • Add the warm milk & yeast mixture, melted butter to the dry ingredients.
  • Add extra flour if the dough is sticky
  • Knead all together
  • The dough should not stick to the bowl
  • Place the dough in a glass bowl with oil, cover with plastic wrap & cover with a tea towel for 1 hour
  • Add the walnuts, sugar & ground cardamon in a food processor and process until a smooth consistency
  • Preheat the oven to 400F or 200C
  • Once the dough has risen, flour the work surface and knead the dough into a log shape
  • Place the balls of dough in the bowl & cover
  • Cut the dough into 5 balls of dough
  • Working with 1 ball of dough at a time, roll out the dough 
    in a circle shape

  • Cut the dough using an 8 inch pot lid & save the excess dough for later use
  • Spread the date molasses on the dough
  • Spread the walnut mixture on top
  • ​Do the same with the apricot jam
  • ​Using a pizza cutter slice the dough in 8 triangles
  • Roll the triangles all the way to the edge
  • Place them all on a baking pan & brush with the egg wash (whisk 1 egg with a little milk)
  • Bake for 20-25 minutes or until golden on top shelf of the oven
  • Place on a cooling rack for 10 minutes
  • Remove excess dried molasses
  • Serve with tea! Enjoy

3-3 & 1/2 cups All Purpose Flour
1 cup Butter (melted)
1 tablespoon Icing Sugar
1 tablespoon 
Milk Powder (Nido)


Yeast

1 cup Milk (lukewarm)
1 teaspoon Sugar
8gms Active Yeast


Filling
1 cup Walnuts
1/4 cup Sweetened Shredded Cocount
1 teaspoon Sugar
1 teaspoon Ground Cardamon
Date Molasses
Apricot Jam
Egg & Milk (for egg wash)
