Directions

  • Add the icing sugar, butter to a mixer & cream together
  • Add the egg & mix
  • Add the vanilla essence & almond extract & mix
  • Gradually add the flour
  • Add the baking powder & salt in the mixer
  • The dough should not stick to the bowl
  • Wrap the cookie dough in plastic wrap
  • Place in the fridge for 1 hour
  • Preheat oven to 350F or 180C
  • Remove the plastic wrap from the dough & cut the dough in half
  • Place the other half back in the fridge
  • Place some flour on the work surface
  • Roll the dough flat 1/4 inch
  • Use a flower cookie cutter
  • Start from the middle working outwards
  • Remove carefully with a spatula
  • Place on a baking tray lined with parchment paper
  • Using a piping tip, cut in the middle of the cookie
  • Cut only half of the batch
  • Bake for 15-20 minutes
  • Remove & place on a cooling rack for 10 minutes
  • Sprinkle icing sugar on the cookies with the holes
  • Flip the other cookie & spread the jam
  • Place the cookie with icing on top of the jam cookies

Dough Ingredients
1 & 1/2 cups All purpose Flour

1/2 cup Sugar

1 Egg

1 teaspoon Baking Powder

1/2 teaspoon Salt

1 teaspoon Vanilla Essence

1/2 teaspoon Almond Extract

1/2 cup Butter/ 1 stick Butter

(room temperature)
