500gms Beef Mince
1 Large Onion
2 tablespoons Thick Yoghurt
1 teaspoon Oregano
1 teaspoon Thyme
1 teaspoon Salt
1 teaspoon Onion Powder
1/2 teaspoon Black Pepper
1/2 teaspoon Paprika
1/2 teaspoon Chilli Powder
2 tablespoons Milk


Cucumber Dip

1 large Cucumber
2 cups Thick Yoghurt
1/2 teaspoon Salt
1 teaspoon Dried Dill

Doner Kebab

  • Quarter & grate the onion
  • ​Place in a sift
  • ​Squeeze all the onion juice in a bowl
  • ​Pour the onion juice in the beef mince
  • ​Add the milk, yoghurt, spices & mix with your hands
  • Place the beef mixture on parchment paper
  • ​Shape into a log & roll the parchment paper
  • ​Roll on another parchment paper
  • ​Twist the ends
  • Place in a ziplock bag
  • ​Refrigerate for 1 day & freeze for 1 day
  • Remove the frozen beef mixture
  • ​Unwrap the parchment paper
  • Hold the beef mixture with a paper towel
  • Slice the frozen beef mixture with a sharp knife
  • ​On medium heat melt a tablespoon of butter in a frypan
  • ​Place the strips of doner kebab in the frypan
  • Fry on both sides until cooked
  • To make the cucumber dip:
  • ​Grate the cucumber
  • ​Place the grated cucumber on a clean tea towel
  • ​Gather the tea towel & squeeze the excess juice into a bowl
  • Place the grated cucumber in a bowl
  • ​Add the salt, dill & yoghurt mix together to the right consistency
  • ​Plate up on a pita bread, tomatoes & onions with sumac and cucumber dip
