1 Small Eggplant (peeled & diced)
1 Tomato (peeled & diced)
3 Sprigs of Spring Onions (sliced)
½ cup Fresh Parsley (chopped)
½ teaspoon Black Pepper
½ teaspoon Citric Acid
½ teaspoon Paprika
½ teaspoon Salt
½ teaspoon Chilli Powder
1 tablespoon Tomato Paste
¼ cup Light Olive Oil
Flat Bread

Eggplant Flat Bread

  • Add the olive oil in a frypan on high heat
  • Add the spring onions & eggplant, fry until cooked
  • Add the tomato & mix
  • Add the spices & mix
  • Add the tomato paste & mix
  • Add the parsley & mix
  • Turn off the heat & set aside
  • Spread mixture evenly on flat bread
  • Bake in the oven for 15-20 mins
