Eggplant Stew

Directions

  • Add some light olive oil in a frypan on high heat
  • ​Add the onions and fry until cooked
  • Add the beef mince and cook until brown
  • ​Move the beef to the side and add the diced eggplant
  • ​Combine together to cook
  • Add the spices to the pan & combine together
  • ​Add the diced tomatoes
  • Add the tomato pureè & combine together
  • Cover & cook on low heat for 30 minutes


​Serve with some rice & enjoy!

1/2 Eggplant (peeled & diced)
400gms Extra Lean Beef Mince
2 Tomatoes (diced)
1 Onion (diced)
213ml can Tomato Pureè
1 tsp Salt
1/2 tsp Ground Black Pepper
1/2 tsp Citric Acid
1/2 tsp Curry Powder
1/2 tsp Parika
