• Preheat oven to 450F or 230C
  • Slice all vegetables
  • Brush the oven dish with oil
  • Layer eggplants on bottom and season with salt
  • Layer potatoes and season with salt
  • Layer the onions
  • Layer the capsicums
  • Then the tomatoes
  • In a glass measuring cup, add 1 cup of boiling water, tomato paste, salt and chilli powder and stir
  • Then pour over the vegetable dish
  • Cover with foil and bake for 1 hour 
  • ​Then uncover and bake for another 30 minutes

1 large Eggplant
2 Potatoes
2 Tomatoes
1 Green Capsicum
1 Onion 

1 cup Boiling Water
1 tablespoon Tomato Paste
1 teaspoon Salt
½ teaspoon Chilli Powder
