Dry Ingredients
1 cup Coconut Flour
½ cup Almond Flour
2 teaspoons Baking Powder
1 teaspoon Cardamom
1 cup Crushed Walnuts
½ cup Erythritol/Sweetener

Wet Ingredients
5 Eggs
½ cup Blueberries
½ cup or 1 stick Butter (room temperature)
¼ cup Sour Cream
1 teaspoon Vanilla Essence
 
Cream Cheese Icing
½ cup Cream Cheese (room temperature)
½ cup Erythritol/Sweetener
1 tablespoon Lemon Juice
1 teaspoon Orange Blossom Water
2 tablespoons Butter (room temperature)

Keto/low Carb Blueberry Cake

  •   Preheat oven 350F or 180C
  • Add the coconut flour, almond flour, sweetener, baking powder & cardamom in a sift and sift together in a bowl
  • Add the crushed walnuts and mix together
  • Crack the eggs in a separate bowl
  • Add the butter, sour cream & vanilla essence
  • Mix together with a hand held mixer
  • Mix in the blueberries
  • Mix in the dry ingredients gradually
  • Spray non stick spray in a loaf pan
  • Place some parchment paper
  • Place the batter in the pan & spread evenly
  • Bake for 40-45 mins
  • Allow to cool completely


For the Icing:

  • Place the sweetener, cream cheese, butter, lemon juice & orange blossom water in a bowl
  • Mix together with a hand held mixer
  • Add the cream cheese icing on top of the cake
  • Spread evenly
  • Spread some crushed walnuts on top
  • Place some blueberries on top
