Dough Ingredients
3 & 1/2 cups All Purpose Flour
1 cup Butter (melted)
1/2 cup Milk (warm)
2 tablespoons Milk Powder (Nido)
1/4 cup Icing Sugar
1 teaspoon Baking Powder
1/2 teaspoon Ground Cardamom
1/2 teaspoon Salt


Yeast

1/2 cup Milk (warm)
2 teaspoons Active Dry Yeast (8gms)
1 teaspoon Sugar


Filling
1&1/2 cups Heavy Cream/
Whipping Cream
1 cup Icing Sugar
1 cup Walnuts (crushed)
1/2 teaspoon Cardamom
2 tablespoons Cream Cheese
1 teaspoon Orange Blossom Water

Egg & Milk (for egg wash)

  • Add the yeast & sugar to the warm milk, stir & set aside for 5 minutes
  • Sift together the flour, icing sugar, milk powder, baking powder, salt & cardamom
  • ​Pour the yeast mixture in a mixer
  • ​​Add the melted butter
  • ​Mix together with a dough hook
  • ​Add the flour mixture gradually
  • ​Add the warm milk gradually
  • Add the flour mixture in a mixer & attach a dough hook
  • Knead all together
  • The dough should not stick to the bowl
  • Place the dough in a lightly greased bowl​, cover with plastic wrap & cover with a tea towel for 1 hour
  • Preheat the oven to 400F or 200C
  • Once the dough has risen, flour the work surface
  • Divide the dough in 4 pieces
  • Make a ball from one of the pieces of dough
  • Working with 1 ball of dough at a time, roll out the dough 
    in a circle shape

  • Using a pizza cutter, divide the circle into 16 triangles
  • Spray the rods with non stick baking spray​
  • Place the rod on the top wide edge of the triangle
  • Roll the triangles all the way to the edge
  • Place them all on a baking pan lined with parchment paper & brush with the egg wash (whisk 1 egg with a little milk)
  • Bake for 20-25 minutes or until golden on top shelf of the oven
  • Set aside to completely cool
  • Twist & turn the pastry to remove from the rod
  • To make the walnut cream:
  • Pour the heavy cream in a bowl, mix with a hand held mixer until the cream thickens
  • ​Sift the icing sugar in the cream, mix with the hand held mixer
  • Add the cream cheese & mix together
  • ​Add the orange blossom water
  • Add the crushed walnuts & mix together
  • ​Place the walnut cream mixture in a piping bag
  • ​Pipe the cream in the holes of the pastry
  • Serve with tea! Enjoy
