Keto/Low Carb Makloubi with Cauliflower Rice

300gms Stir Fry Beef
1 Onion (sliced)
3 Tomatoes (sliced)
2 Green Peppers (diced)
1 Large Eggplant (sliced)
Light Olive Oil
Salt to season

Cauliflower Rice
340gms Frozen Cauliflower Rice (thawed)
1 Onion (diced)
1 tablespoon Tomato Paste
1 tablespoon Light Olive Oil
½ -1 teaspoon Salt

Directions

Ingredients 

  • ​​Place the sliced eggplants on a wire rack & season with sea salt
  • Set aside for 10 minutes
  • On high heat add some olive oil in a frypan
  • Add the diced green peppers & fry until cooked
  • Remove & set aside
  • Add the sliced onion & fry until cooked
  • Remove & set aside
  • Add the sliced tomatoes in the frypan & cook on both sides
  • Remove & set aside
  • Dab the eggplant with a paper towel to remove excess water
  • Add some olive oil in the frypan
  • Add the sliced eggplants in the frypan & cook on both sides
  • Remove & set aside 
  • Add the stir fry beef in the frypan
  • Season with some salt & cook until brown
  • Remove & set aside

To make the cauliflower rice:

  • Add the olive oil in the frypan
  • Add the diced onion & fry until cooked
  • Add the cauliflower rice & fry until cooked
  • Add the tomato paste & mix together
  • Add the salt & mix together
  • Cook for 10 minutes
  • Remove & set aside
  • Lightly oil a baking dish
  • Place the tomatoes first
  • Place the green peppers on top
  • Place the sliced onions on top
  • Place the sliced eggplant on top
  • Place the stir fry beef on top
  • Season with some salt
  • Add the cauliflower rice
  • Bake at 350F/180C for 20 mins
  • Place a large dish on top & FLIP!
