6 small Yellow Potatoes

Bunch of Spring Onions

1 tablespoon Light Olive Oil

Salt & Pepper to season




  • Peel the potatoes
  • ​Place them in a pot with cold water
  • Cook on low-med heat until soft
  • Place them in a bowl
  • Slice the spring onions
  • Add the oil in a frypan on high heat
  • Fry the onions until soft
  • Cut the potatoes, season with salt & pepper
  • Add the fried onions to the potatoes
  • Mash everything together until soft
