Ingredients

Mujaddara

1 cup Basmati Long Grain Rice
1 cup Green Lentils
3 cups Water
1/2 Onion (finely diced)
2 tablespoons Light Olive Oil
1 teaspoon Salt
1/2 teapoon Black Pepper


​2 1/2 Onions (sliced)
4 tablespoons Light Olive Oil

Directions

  • Soak the rice for 20 minutes
  • Rinse & strain the rice
  • Rinse the lentils & strain
  • Add the lentils & water in a saucepan
  • Cover & cook on low-med heat for 15 minutes & stir once in awhile
  • Strain the liquid
  • ​In the same saucepan on high heat add the 2 tablespoons of oil
  • Add the 1/2 diced onion & fry until soft
  • Add the rice & fry for a minute
  • Add the lentils & mix all together
  • Add the strained liquid & stir
  • Add the salt & pepper & stir
  • Cover & cook on low heat for 20 minutes
  • Stir once after the liquid has evaporated
  • Add the 4 tablespoons of oil in a frypan on high heat
  • Add the sliced onions, fry on medium heat until caramelised 
  • Place the rice in a dish & place the onion on top
