  • Preheat oven to 450F or 230C
  • Peel the potatoes, cut the potatoes in half, then cut in chunks
  • Drizzle some oil in a baking dish
  • Place the chicken pieces in the dish
  • Add all the potatoes in the dish
  • ​Add the tomato paste, curry powder, salt, in the boiling water
  • Stir all together
  • ​Pour all over the chicken & potatoes
  • Add the chopped parsley on top
  • Cover with foil
  • ​Place in the oven covered for 1 hour
  • Uncover & bake another 1/2 an hour​

4 Chicken Thighs
5 Chicken Drumsticks
3 Yellow Potatoes
2 tablespoons Tomato Paste
1/4 cup finely chopped Parsley
1 teaspoon Curry Powder
1 teaspoon Salt
Extra Virgin Olive Oil
2-3 cups Boiling Water
