2kg Tilapia (white boneless fish)
2 Tomatoes (diced)
1/2 bunch Fresh Parsley (chopped)
1 Onion (diced)
1 teaspoon Curry Powder
1/2 teaspoon Salt
1/2 teaspoon Ground Black Pepper
1 Lemon
213ml Tomato Sauce/Puree
Sea salt
Extra Virgin Olive Oil

Directions

  • Cut & juice the lemon
  • Drizzle some oil in a baking dish
  • Place all the fish in a large deep dish
  • Drizzle some extra virgin olive oil on top of the fish
  • Season with sea salt
  • Pour half of the lemon juice on top of the fish
  • Grill/Broil the fish for 10 minutes (then remove from the oven)
  • Preheat the oven 400F or 200C
  • On high heat add some oil in a saucepan
  • Add the onion & fry until soft
  • Add the tomato & fry until soft
  • ​Add the spices & mix together
  • Reduce the heat & add the tomato puree
  • ​Add the remainder of the lemon juice
  • ​Add half of the parsley & mix
  • ​​​Cook covered for 10 minutes
  • Pour the sauce over the grilled fish
  • ​Cover all the fish with the sauce
  • ​Bake for 20 minutes
