Pistachio Nougat


1 cup Sugar
1/4 cup Water
1 cup Pistachios
2 Egg Whites
5gms Vanilla Sugar
2 tablespoons Glucose Syrup
Corn Starch


  • Whisk the egg whites with a mixer
  • Add the sugar in a saucepan
  • Add the water & the glucose syrup
  • Stir together
  • Boil on high heat
  • Heat upto 350F or 175C
  • Add the vanilla sugar to the egg whites
  • Mix together
  • Slowly add the syrup while mixing
  • Add the pistachios & mix together
  • In a square dish, add some corn starch
  • Pour the mixture in the dish
  • Smooth & flatten the mixture
  • Add more corn starch on top​ & smooth over
  • Refrigerate overnight
  • Take the nougat out from the dish
  • Using a sharp knife cut the nougat in slices, then into squares
  • ​Place the knife in the corn starch if sticky
