Ingredients

  • Sift the flour, vanilla & baking powders together
  • Add the sugar & butter in a mixer
  • Cream together & scrape sides
  • Add the egg & mix
  • On slow speed add the flour gradually & scrape the sides
  • Mix until the dough doesn't stick to the sides
  • Place in a bowl, cover in plastic wrap & refrigerate for 1/2 an hour (not longer)
  • Chop the pistachios & place in a flat & shallow dish
  • ​Place the sesame seeds in a flat & shallow dish
  • Add some of the sugar syrup in the sesame seeds & mix
  • Mix until sesame seeds stick to the back of the spoon
  • Preheat oven 350F or 180C
  • Using a 1  1/2 inch or 4cm ice-cream scoop, scoop a small ball of the dough
  • Divide into 2 and round them into balls
  • Press the ball in the pistachios making a disc
  • ​Then gently press the other side on the sesame seeds
  • ​Place pistachio face down on a parchment lined baking pan
  • Bake for 20-25 minutes
  • Let them cool for 10 minutes before placing them on a cooling rack
  • Makes about 40 cookies ENJOY!

Directions

2 cups All Purpose Flour
1 cup Butter (room temperature)
1 1/2 -2 cups Sesame Seeds (toasted)
1 cup Pistachios
1 cup Sugar
1 Egg (room temperature)
1 teaspoon Vanilla Powder
1 teaspoon Baking Powder
2-3 tablespoons Sugar Syrup
1/4 cup Sugar & 1/4 cup water 
(heated over a cooktop then cooled down)
