1 Onion (diced)
1 bunch Spring Onions (sliced)
2 packages Frozen Spinach (thawed)
1 package Phyllo Pastry
3 tablespoons Lemon Juice
1 teaspoon Salt
1 teaspoon Sumac
2 tablespoons Light Olive Oil
Extra Virgin Olive Oil

Spinach Triangle Bourek

  • Squeeze out excess water from the spinach
  • On high heat add the oil in a frypan
  • Fry the onion until soft
  • Add the spring onion & fry until soft
  • Remove & place in a bowl to cool down
  • Add the cooked onions in the spinach
  • Add the salt & sumac & mix together​
  • Add the lemon juice & mix​
  • Cut the phyllo pastry roll in 4 pieces
  • Add some extra virgin olive oil in a bowl
  • Preheat oven 400F or 200C
  • Place 1 layer of phyllo & brush on some oil on the phyllo
  • Add the 2nd layer of phyllo on top
  • Place a spoonful of the spinach on the edge of the corner
  • Fold over to a shape of a triangle
  • Keep flipping forward, making a shape of a triangle
  • ​Trim off leftover phyllo
  • Place on a baking tray & brush with olive oil on top
  • ​Bake for 30 minutes
