Ingredients 

½ kilo Extra Lean Beef Mince
398mls Diced Tomatoes
½ Large Eggplant (peeled & diced)
1 cup Fresh Parsley (chopped)
1 Onion (diced)
Mixed Peppers
1 teaspoon Curry Powder
1 teaspoon Paprika
½ teaspoon Black Pepper
1 teaspoon Salt
2 tablespoons Light Olive Oil
Mozzarella Cheese

Keto/Low Carb Stuffed Peppers

  • On high heat add the olive oil in a frypan
  • Add the onion & fry until cooked
  • Add the diced eggplant & fry until cooked
  • Move to the side & add the beef mince
  • Cook until brown & mix together
  • Add the spices & mix together
  • Reduce the heat
  • Add the diced tomatoes & mix together
  • Add the chopped parsley & mix together
  • Cover & cook on low heat for 10-15 mins
  • Place some mixture in a baking dish
  • Add some mozzarella cheese at the bottom of the peppers
  • Fill the peppers with the beef mixture
  • Top up with mozzarella cheese
  • Fill the gaps of the baking dish with the left over beef mixture
  • Cover with aluminium foil
  • Bake covered at 450F/225C for 40 mins
  • Bake uncovered for another 20 mins
