sweet Semolina Cake

Directions

  • Making the sugar syrup
  • ​​Place the sugar & water in a saucepan on high heat
  • Stir together until the sugar dissolves
  • Reduce the heat
  • Add the lemon juice & stir
  • Add the orange blossom & stir
  • Turn off the heat
  • Making the cake batter
  • ​Sift the semolina, flour, baking powder and vanilla sugar all together
  • ​Add the eggs & sugar to a mixer and mix all together
  • ​Add the vegetable oil & coconut
  • Gradually add the flour mixture & milk
  • Preheat oven 350F/180C
  • ​Spray non stick spray in a 30cm  round baking pan
  • ​Pour the batter in the pan
  • ​Spread evenly
  • ​​Using a knive cut the batter & divide into 8 triangles
  • Place blanched almonds on the batter
  • Cut into the batter to make a circle
  • ​Bake in the oven for 40 mins middle shelf
  • Cut the outline again
  • ​Pour the sugar syrup on top
  • ​​Let it sit for 15-20 minutes
  • Place a cooling rack on top of the pan & FLIP!
  • ​Place a dish on top......FLIP!

Cake Batter

​1 cup Fine Semolina
1 cup All Purpose Flour
1 tablespoon Baking Powder
9gms Vanilla Sugar

1/2 cup Sweetened Shredded Coconut
1/2 cup Sugar
2 Eggs (room temperature)
1/2 cup Vegetable Oil
1/2 cup Milk


Sugar Syrup

1 cup Sugar
1/2 cup Water
1 tablespoon Lemon Juice
1 teaspoon Orange Blossom Water


Blanched almonds
