Tlokha't Tamata / Tomato Red Lentil Soup

Ingredients

  • Wash & drain the red lentils
  • Add the olive oil in a pot on high heat
  • Add the chopped onion
  • Add the chopped pepper
  • Fry for 10 minutes or until soft
  • Add the red lentils
  • Add the diced tomatoes
  • Add the salt & pepper
  • ​Add the boiling water
  • Stir all together
  • ​Cover & cook for 30 minutes on low heat
  • ​Using a hand held blender, blend the soup all together
  • Cook on low heat for a further 10 minutes

796ml can Diced Tomatoes
4 cups Red Lentils
1 Brown Onion (chopped)
1 Green Pepper/Capsicum (chopped)
1 tablespoon Salt
1 teaspoon Black Pepper
2 tablespoons Light Olive Oil
8 Cups Boiling Water
