Directions

Vegetable Red Lentil Soup

Ingredients

2 small Yellow Potatoes (peeled & diced)

1 Onion (diced)

1 cup Red Lentils

1 cup mixed Carrots & Peas

1/2 cup Vermicelli Pasta

4 tablespoons Light Olive Oil
1 teaspoon Curry Powder
1 teaspoon Salt
5-6 cups Boiling Water

  • Rinse & strain the red lentils
  • Heat a large pot on high heat & add the olive oil
  • Add & fry the onion until soft
  • Add the vermicelli pasta & mix
  • Add the potatoes & mix
  • Add the lentils & mix
  • Add the carrots & peas & mix
  • Add the curry powder, salt and mix
  • Add boiling water & reduce the heat on low
  • Stir all together
  • Cover & cook for 40 minutes
  • ​Stir regularly before turning off
