Directions

  • Heat a large pot on high heat & add the olive oil
  • Add & fry the onion 
  • Add & fry the capsicum
  • Add & fry the potatoes for 5 minutes
  • Add & fry the eggplants for 5 minutes
  • Close the lid & steam for 5 minutes
  • Add the tomatoes & parsley & mix all together
  • Add tomato paste & spices & mix all together
  • Cover & cook on low for 1 hour
  • Stir regularly
  • Taste potatoes to check tenderness
  • Serve with white rice & ENJOY!

1 large Eggplant (peeled & diced)
4 small Yellow Potatoes (peeled & diced)
1 Onion (diced)
3 large Tomatoes (peeled & diced)
1 Green Capsicum (diced)
1 cup Fresh Parsley (chopped)
2 tablespoons Tomato Paste
1 tablespoon Salt
1/2 teaspoon Chilli Powder
1/2 teaspoon Black Pepper
4 tablespoons Light Olive Oil
