  • Place the potatoes in a saucepan & add cold water
  • Cover & cook on low heat until tender
  • Drain the water & add cold water to cool down the potatoes
  • Peel the potatoes and place in a bowl
  • Cut & mash the potatoes
  • Add all ingredients in a bowl and mix with hands
  • Make a small ball with the mixture & flatten and make into patties
  • In a deep frypan heat the olive oil until hot
  • Add the arook one at a time and fry & flip on both sides until golden
  • Drain excess oil & place on a paper towel dish

Vegetarian Arook

4 Yellow Potatoes

1 cup Bread Crumbs

1 bunch Spring Onions (sliced)

1/2 cup Fresh Parsley (chopped)

1/2 cup grated Carrot
¼ cup Flour

2 tablespoons Tomato Paste

1 teaspoon Salt

​1 teaspoon Curry Powder

1 teaspoon Baking Powder

1 teaspoon Baking Soda

1/2 teaspoon Paprika

Light Olive Oil for frying
