Potato
4 Yellow Potatoes
1 cup Bread Crumbs
1 teaspoon Salt
1/2 teaspoon Tumeric
Light Olive Oil for frying

Filling
1 cup Mixed Carrots & Peas
1 bunch Spring Onions (sliced)
2 tablespoons Light Olive Oil
1/2 teaspoon Curry Powder
1/2 teaspoon Paprika
1/2 teaspoon Salt

Directions

Vegetarian Potato Chap / Potato Patties

  • Place the potatoes in a saucepan & add cold water
  • Cover & cook on low heat until tender
  • Drain the water & add cold water to cool down the potatoes
  • Peel the potatoes & place them in a bowl
  • Cut & mash the potatoes
  • ​Add the salt & tumeric & mix together
  • Set aside and cool
  • Add the bread crumbs & mix with your hands
  • In a small frypan add the oil on high heat
  • Add the spring onions & fry until soft
  • Add the carrots & peas & fry until soft
  • Add the spices & mix together
  • Place in a bowl to cool down
  • Make a small ball from the potato mixture
  • Make a dent in the middle and make the opening wider
  • Place a spoonful of the vegetable filling
  • Close & seal the pattie
  • Pour some oil in a saucepan
  • Heat the oil on high heat
  • Add the patties one at a time
  • Fry & flip on both sides until golden
  • Strain excess oil & place on a paper towel dish
