Ingredients

1 litre Whole Milk (3%)

3 tablespoons Yoghurt

Yoghurt/Masta

  • Preheat oven 350F or 180C, then turn it off after it preheats to cool down
  • Add the milk in a saucepan 
  • Turn on heat Med-High
  • Stir frequently to prevent scolding
  • Using a thermometer, heat the milk to 85C or 185F
  • ​Fill the sink with cold water
  • ​Place the saucepan in the water bath to cool down
  • ​Cool down to 43C or 110F
  • ​​Pour 1 cup of the milk in the yoghurt
  • Whisk together until smooth
  • ​Pour the mixture in the milk
  • ​​Mix together and cover with lid
  • Cover with a towel or blanket
  • ​Place in the oven for 12 hours and leave the light turned on

    (The oven needs to be OFF!)

  • ​After 12 hours place the yoghurt in the refrigerator 
    (if you want the yoghurt more sour keep in the oven for 24 hours)
