Za'atar Potato Wedge Salad

4 Yellow Potatoes
Za'atar Blend
Extra Virgin Olive Oil
Sea Salt

Salad
Arugula/Rocket Salad
Parsley
Tomatoes
Red Onion
Cucumber
Lemon Juice
Salt
Extra Virgin Olive Oil

  • ​​​ Preheat oven 450F/225C
  • Cut the potatoes with their skin in half, cut again half, then cut in wedges
  • Place the wedges in bowl
  • Drizzle some oil on the potatoes
  • Season with sea salt
  • Add some Za'atar
  •  Mix with your hands
  • Place the wedges on a baking pan lined with parchment paper
  • Bake in the oven for 50 minutes
  • To make the salad:
  • Roughly chop the arugula & place in a bowl
  • Slice the cucumbers & place in the bowl
  • Cut the tomatoes in wedges & place in the bowl
  • Slice the red onion & place in the bowl
  • Finely chop the parsley & place in the bowl
  • Mix all together & refrigerate
  • Take the wedges out of the oven & allow to cool
  • Drizzle some olive oil on the salad
  • Add some lemon juice
  • Add some salt
  • Toss all together
  • Place the wedges on top
  • Squeeze a lemon on top
