½ kilo Stewing Beef 1 Onion (diced) 156ml can Tomato Paste 2 Zucchini’s 1 teaspoon Salt 1 teaspoon Curry Powder ½ teaspoon Paprika 3-4 cups Boiling Water
Zucchini Stew / Shorbat Qareh
Place the stewing beef in a large pot
Add cold water
Cover & cook on low heat for at least 2 hours or until the beef is tender
Drain all the water
Peel the zucchini’s, cut off the ends & slice the zucchini in half
Then make slices
Add the sliced zucchini in the pot of stewing beef
Add the diced onion, tomato paste, spices & 3-4 cups of boiling water
Mix all together
Cover & cook on low heat for at least 1 hour or until the zucchini is tender
